Ingredients
4 boneless skinless chicken breasts
4 cloves garlic, minced
3 tablespoons capers
1 lemon, sliced
1/4 cup fresh lemon juice
3 tablespoons butter
1/2 cup chicken broth
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Pat the chicken breasts dry and season with salt and pepper. Lightly dredge them in flour and shake off excess.
2. Heat olive oil in a skillet over medium-high heat and sear chicken 2-3 minutes per side until golden (optional but recommended).
3. Transfer chicken to crockpot. Add garlic, lemon juice, chicken broth, capers, and lemon slices. Dot with butter.
4. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until tender and cooked through.
5. Taste sauce, adjust seasoning if needed, garnish with parsley, and serve warm.
Notes
For best flavor, sear the chicken before slow cooking.
Use fresh lemon juice instead of bottled for brighter flavor.
If sauce is too thin, remove chicken and simmer sauce on stovetop to reduce and thicken.
