For the Steak:
- 1 lb ribeye or strip steak
- Salt and freshly ground black pepper
- 1 tbsp olive oil
- 1 tbsp butter
For the Garlic Butter Noodles:
- 8 oz linguine or spaghetti
- 4 tbsp unsalted butter
- 5 cloves garlic, finely grated or minced
- 1/4 cup reserved pasta water
- 1 tsp lemon juice (optional)
- 1/2 tsp crushed red pepper flakes (optional)
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
- Grated Parmesan or Pecorino Romano (optional)
Optional Garnish:
- Toasted sesame seeds
- Extra parsley
- Drizzle of garlic butter from pan
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until just shy of al dente. Reserve 1 cup of pasta water and drain.
- Season steak with salt and pepper. Let rest at room temp for 20–30 minutes.
- Heat a cast iron skillet over high heat. Add olive oil and sear steak for 3–4 minutes per side. Add butter and baste for 1 minute. Remove and rest for 5–10 minutes.
- In the same pan, reduce heat to medium. Add butter and garlic, sauté until golden and fragrant.
- Add pasta water, lemon juice, and red pepper flakes. Stir to emulsify.
- Toss cooked noodles in garlic butter sauce. Add parsley and season with salt and pepper.
- Slice rested steak against the grain. Layer over noodles.
- Garnish with sesame seeds, more parsley, and cheese if desired. Serve hot.
