1 ½ lbs sirloin steak or ribeye, cut into 1-inch cubes

salt and black pepper, to taste

2 tablespoons olive oil

3 tablespoons unsalted butter

4 garlic cloves, finely minced

½ teaspoon crushed red pepper flakes (optional)

1 tablespoon fresh chopped parsley

10 oz cheese tortellini (fresh or refrigerated)

2 tablespoons unsalted butter

3 garlic cloves, minced

1 cup heavy cream

¾ cup freshly grated Parmesan cheese

salt and pepper, to taste

¼ teaspoon garlic powder

½ cup baby spinach or sun-dried tomatoes (optional)


Instructions

1. Bring a pot of salted water to a boil and cook the cheese tortellini until al dente. Drain and set aside.

2. Pat steak pieces dry with paper towels and season with salt and pepper.

3. Heat olive oil in a cast iron skillet over medium-high heat. Sear steak bites in a single layer for 2–3 minutes per side until golden brown. Work in batches if needed. Remove steak and set aside.

4. In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and red pepper flakes. Cook for 1–2 minutes.

5. Return the steak to the skillet and toss in garlic butter. Remove from heat and cover loosely.

6. In a separate pan, melt 2 tablespoons butter. Add garlic and sauté for 1 minute.

7. Stir in heavy cream and bring to a gentle simmer. Whisk in Parmesan cheese until smooth.

8. Season sauce with garlic powder, salt, and pepper. Add spinach or sun-dried tomatoes if using.

9. Toss the cooked tortellini in the sauce until evenly coated.

10. Plate tortellini, top with steak bites, drizzle remaining garlic butter, and garnish with parsley and extra Parmesan.

Always pat steak dry before searing — this ensures a proper crust and flavor.

Don't add cold cream to a hot pan — bring it to room temp to avoid curdling.
