500g sirloin steak

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

3 tablespoons unsalted butter

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

250g pasta shells

1 cup heavy cream

2 tablespoons unsalted butter

2 cloves garlic, minced

½ cup Parmesan cheese, freshly grated

1 cup sharp cheddar cheese, shredded

½ teaspoon paprika or red pepper flakes (optional)

1 tablespoon fresh parsley, chopped


Instructions

1. Cut the steak into 1 to 1½ inch cubes and pat dry with paper towels. Season with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Add steak cubes in a single layer and sear for 2–3 minutes per side until browned. Work in batches if necessary. Remove steak and set aside.

3. In the same skillet, reduce heat to medium. Add butter and minced garlic. Sauté for 30 seconds until fragrant. Return steak bites to the pan and toss in garlic butter. Finish with chopped parsley.

4. While steak cooks, bring a pot of salted water to a boil and cook pasta shells according to package directions until al dente. Drain and set aside.

5. In a separate saucepan, melt butter over medium heat. Add minced garlic and cook for 1 minute. Stir in heavy cream and let simmer for 4–5 minutes.

6. Slowly add Parmesan and cheddar cheese, stirring constantly until melted and smooth.

7. Add cooked pasta shells to the sauce and mix to coat evenly. Season to taste with salt and pepper.

8. Plate the cheesy shells and top with steak bites. Garnish with paprika or red pepper flakes and more parsley. Serve hot.


Notes

Let steak come to room temperature before cooking for even doneness.

Always use freshly grated cheese for a smooth, creamy Alfredo sauce.

Save a little pasta water in case your sauce needs thinning out.
