1/2 cup unsalted butter, melted

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon baking powder

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1/2 teaspoon vanilla extract

1 tablespoon all-purpose flour

1 cup crushed chocolate sandwich cookies

1/2 cup semi-sweet chocolate chips

1/4 cup heavy cream

Additional crushed cookies for topping (optional)


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8 inch square baking pan with parchment paper, leaving an overhang. Lightly grease it.

2. In a bowl, whisk together melted butter, granulated sugar, and brown sugar. Add eggs and vanilla extract, then mix until smooth.

3. Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined. Pour 2/3 of this batter into the prepared pan and spread evenly.

4. In another bowl, beat softened cream cheese with sugar until smooth. Add egg and vanilla, then mix. Stir in flour and fold in crushed cookies.

5. Gently spread cheesecake mixture over brownie layer. Drop remaining brownie batter in spoonfuls over top and swirl with a knife if desired.

6. Bake for 35–40 minutes, until edges are set and center is slightly jiggly. Cool completely, then refrigerate at least 2 hours.

7. In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in intervals, stirring until smooth. Pour over bars and spread evenly.

8. Chill for 30 more minutes until ganache sets. Use parchment to lift bars out and slice with a clean sharp knife.


Notes

Always bring cream cheese to room temperature for a lump-free cheesecake layer.
