  • 4 firm green tomatoes, sliced 1/4 to 1/2 inch thick
  • 1/2 cup all-purpose flour
  • 1/2 cup buttermilk (or milk + 1 tsp vinegar)
  • 1 egg
  • 1/2 cup cornmeal
  • 1/2 cup breadcrumbs (panko or seasoned)
  • 1/2 tsp salt, plus extra for sprinkling
  • 1/4 tsp black pepper
  • 1/4 tsp paprika or cayenne (optional)
  • Vegetable or peanut oil for frying

Instructions

  1. Slice tomatoes and lay on paper towels. Sprinkle with salt and let rest 10 minutes. Blot dry.
  2. Prepare dredging station with three bowls: flour, whisked egg and buttermilk, and cornmeal mixed with breadcrumbs and spices.
  3. Dredge each tomato slice in flour, then dip in egg mixture, then coat thoroughly in breadcrumb mixture.
  4. Heat oil in a skillet over medium-high to 350°F.
  5. Fry tomato slices in batches, 2–3 minutes per side until golden and crispy.
  6. Drain on paper towels or wire rack. Sprinkle with salt and serve hot.
