Ingredients
4 pork chops (bone-in or boneless, 1 to 1.5 inches thick)
Salt and black pepper to taste
2 tablespoons olive oil or butter, divided
2 large yellow onions, thinly sliced
1 teaspoon sugar (optional)
3 cloves garlic, minced
1/2 cup beef broth
1/4 cup dry white wine (optional)
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
1/2 teaspoon Worcestershire sauce
1 cup shredded Gruyère or Swiss cheese
Fresh chopped parsley or thyme sprigs for garnish (optional)
Instructions
1. Season pork chops generously with salt and pepper. Let them rest at room temperature.
2. In a large cast iron or oven-safe skillet, heat 1 tablespoon oil or butter over medium heat. Add onions and a pinch of salt and sugar. Cook for 20–25 minutes until golden and caramelized. Add garlic and cook for 1 minute.
3. Deglaze the pan with beef broth and wine. Scrape up brown bits and stir in thyme and Worcestershire. Simmer for 2–3 minutes, then transfer onions to a bowl.
4. Wipe the skillet and add the remaining oil or butter. Sear pork chops over medium-high heat for 3–4 minutes per side until browned (not fully cooked).
5. Preheat oven to 375°F (190°C). Lower heat, top pork chops with caramelized onions, then cheese.
6. Transfer the skillet to the oven. Bake for 10–15 minutes or until pork reaches 145°F and cheese is melted.
7. Rest pork chops for 5 minutes before serving. Garnish with fresh herbs if desired.
Notes
Caramelize onions slowly for the best sweet-savory flavor.
Bone-in pork chops retain more juiciness during cooking.
Rest the pork before serving to lock in moisture.
