A comforting and savory French Onion Ground Beef & Rice Casserole made with caramelized onions, seasoned ground beef, creamy rice, and melty cheese. It’s a simple, cozy dish that’s full of flavor and perfect for a family dinner or meal prep.

  • 1 lb ground beef
  • 1 1/2 cups cooked long-grain white rice
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 cup sour cream or cream cheese
  • 1/2 cup beef broth
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 1/2 cups shredded cheese (Mozzarella, Provolone, or Gruyère)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, melt butter over medium-low heat and add sliced onions. Cook slowly, stirring often, for 25–30 minutes until caramelized.
  3. In a separate skillet, brown the ground beef over medium heat. Add garlic, salt, and pepper. Drain excess fat.
  4. In a large bowl, mix cooked rice, browned beef, half of the caramelized onions, sour cream, broth, thyme, and season to taste.
  5. Transfer the mixture to a greased baking dish.
  6. Top with the remaining caramelized onions and shredded cheese.
  7. Bake for 20–25 minutes until bubbly. Broil for 1–2 minutes for a golden cheese top if desired.
  8. Let rest a few minutes before serving.
