1 can (10.5 ounces) French onion soup
1 can (10.5 ounces) cream of mushroom soup
1 ½ cups shredded mozzarella or Gruyère cheese
1 small onion, chopped (optional)
1 tablespoon butter or oil
½ teaspoon salt

4. Stir in 1 cup of shredded cheese until evenly combined.
5. Transfer the mixture into the baking dish and spread it out.
6. Top with the remaining ½ cup of shredded cheese.
7. Cover the dish with foil and bake for 25 minutes.
8. Uncover and bake for an additional 10–15 minutes until the cheese is golden and bubbling.
9. Let the casserole rest for 5–10 minutes before serving.
10. Garnish with chopped parsley or chives.
Notes
For a stronger onion flavor, use both the canned soup and freshly sautéed onions.
To make this lower in fat, use lean ground beef and reduced-fat cheese.
This casserole freezes well—just thaw overnight before reheating.
