6 large eggs
1/3 cup whole milk or half-and-half
1/3 cup shredded sharp cheddar cheese
1/3 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1/4 cup crumbled goat cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter or olive oil
1 tablespoon chopped fresh herbs (optional)
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease an oven-safe skillet (8–10 inches) with butter or olive oil.
2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth and slightly frothy.
3. Stir in cheddar, mozzarella, and parmesan cheeses. Set aside the goat cheese to add later.
4. Pour the egg mixture into the preheated skillet over medium heat. Cook undisturbed for 2–3 minutes until the edges begin to set.
5. Gently lift the edges to allow uncooked egg to flow underneath. Dot the top with goat cheese.
6. Transfer the skillet to the oven and bake for 10–12 minutes until the center is just set and the top is golden.
