2 cups fresh okra, chopped

2 tablespoons oil

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

1 teaspoon coriander powder

1/2 teaspoon amchur powder (or lemon juice)

Salt to taste


Instructions

1. Wash the okra thoroughly and dry it completely using a kitchen towel or paper towels.

2. Trim both ends and cut into 1/2-inch thick pieces.

3. Heat oil in a wide nonstick pan over medium flame.

4. Add cumin seeds and let them sizzle for a few seconds.

5. Add chopped okra and spread it out in the pan. Stir gently to coat.

6. Cook uncovered for 10–12 minutes, stirring occasionally until lightly crisped.

7. Add turmeric, red chili powder, coriander powder, and salt. Mix to coat evenly.

8. Add amchur powder and cook for 2–3 more minutes.

9. Serve hot with rice or roti.


Notes

Always dry the okra completely after washing to prevent sliminess.

Use a wide, shallow pan for better crispiness.

Add salt only after the okra is mostly cooked to avoid moisture release.
