Ingredients
2 cups raw walnut halves
4 tablespoons unsalted butter
1/2 cup brown sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Optional: caramel sauce for drizzling
Optional: sea salt flakes for garnish
Instructions
1. Preheat oven to 350°F (175°C). Spread walnut halves on a baking sheet and toast for 8–10 minutes, stirring once, until fragrant and lightly golden.
2. In a medium saucepan, melt the butter over medium heat. Add brown sugar and stir until it begins to bubble. Cook for 2–3 minutes until it thickens slightly.
3. Remove from heat and stir in vanilla extract and salt.
4. Pour toasted walnuts into the saucepan and stir well to evenly coat with the toffee glaze.
5. Spread coated walnuts on a parchment-lined baking sheet, separating them to avoid clumping.
6. Let cool at room temperature for 30–40 minutes until the glaze hardens.
7. Once cooled, optionally drizzle with caramel sauce or sprinkle with sea salt flakes. Serve and enjoy.
Notes
Make sure to spread the walnuts apart before the toffee sets to avoid clumping.
Use parchment paper to keep your baking sheet clean and toffee from sticking.
To revive slightly softened walnuts, bake for a few minutes at 300°F to crisp them back up.
