Ingredients
12 oz jumbo pasta shells or fresh lasagna sheets
15 oz ricotta cheese
5 oz fresh spinach
1 large egg
1 cup grated parmesan cheese
1 cup shredded mozzarella cheese
2 cloves garlic, minced
1/8 tsp ground nutmeg
1/2 tsp salt
1/2 tsp black pepper
2 cups marinara sauce
2 tbsp chopped fresh basil or parsley
Instructions
1. Boil pasta shells or lasagna sheets in salted water until al dente. Drain and set aside.
2. Sauté garlic, add spinach, cook until wilted, then drain and chop.
3. Mix ricotta, spinach, egg, parmesan, mozzarella, nutmeg, salt, and pepper.
4. Spread marinara sauce in a baking dish.
5. Fill pasta or roll sheets and place in dish.
6. Top with sauce and cheese.
7. Cover and bake at 375°F for 25 minutes.
8. Uncover and bake 10–15 more minutes.
9. Rest 5 minutes, garnish, and serve.
Notes
Drain ricotta or spinach well to avoid excess moisture.
Do not overcook pasta before baking.
