Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups chopped green cabbage
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper

 

  • Optional: ½ teaspoon paprika, thyme, or chili flakes

Instructions

  • In a large soup pot, heat olive oil over medium heat.
  • Add diced onion, garlic, carrots, and celery. Sauté for 5–7 minutes until softened.
  • Stir in chopped cabbage and cook for another 2–3 minutes.
  • Add diced tomatoes (with juice) and vegetable broth. Stir to combine.
  • Season with salt, pepper, and any optional spices.
  • Bring to a boil, then reduce heat and simmer for 25–30 minutes, uncovered.
  • Taste and adjust seasoning as needed.

 

  • Serve hot, garnished with fresh herbs or lemon if desired.
