Ingredients
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 cup granulated sugar
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1 large egg yolk
2 tablespoons ice water
4 oz cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon pure vanilla extract
2 tablespoons heavy cream
8 oz dark chocolate (60–70% cocoa), finely chopped
3/4 cup heavy cream
1 tablespoon unsalted butter
1 cup fresh raspberries
Fresh mint leaves
Flaky sea salt or powdered sugar (optional)
Instructions
1. In a bowl, mix flour, cocoa powder, sugar, and salt. Add cold butter and blend until crumbly. Mix in egg yolk and ice water until dough forms. Wrap and chill for 30 minutes.
2. Preheat oven to 350°F (175°C). Roll dough into a tart pan, prick base, line with parchment, and use pie weights. Bake 15 minutes, remove weights, and bake 10 more. Cool completely.
3. Beat cream cheese with powdered sugar until smooth. Add vanilla and cream, whip until light. Spread onto cooled crust and refrigerate.
4. Heat cream in a saucepan until just simmering. Pour over chopped chocolate, let sit 1 minute, then stir smooth. Stir in butter until melted.
5. Pour ganache over cream layer, tilt to level. Let set slightly, then refrigerate for 2 hours until firm.
6. Top with raspberries and mint. Sprinkle with flaky salt or powdered sugar. Slice with a warm knife. Serve chilled.
