Ingredients
2 medium eggplants
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup ricotta cheese
1/3 cup crumbled feta cheese
1 clove garlic, minced
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh mint
1 teaspoon lemon zest
2 tablespoons balsamic glaze
Optional: fresh berries and mint for garnish
Instructions
1. Slice eggplants lengthwise into 1/4-inch thick strips. Salt lightly and let rest for 15 minutes, then pat dry.
2. Preheat oven to 400°F (200°C). Brush eggplant slices with olive oil and roast on a parchment-lined baking sheet for 20 minutes, flipping halfway through.
3. In a bowl, combine ricotta, feta, garlic, parsley, mint, lemon zest, salt, and pepper. Mix until creamy.
4. Let roasted eggplant cool. Add a spoonful of filling to the wider end of each slice and roll tightly.
5. Arrange roll-ups seam-side down. Drizzle with balsamic glaze and garnish as desired.
