Ingredients

Scale

1 cup all-purpose flour

2 large eggs

1 1/4 cups eggnog

2 tablespoons unsalted butter, melted

1 tablespoon granulated sugar

1/2 teaspoon vanilla extract

1/4 teaspoon ground nutmeg

Pinch of salt

Optional toppings:

Whipped cream

Fresh berries

Powdered sugar

Maple syrup or caramel

Spiced apples or pears

Instructions

1. In a blender or bowl, mix the flour, eggs, eggnog, melted butter, sugar, vanilla, nutmeg, and salt until smooth. Rest the batter for 30 minutes in the fridge.

2. Preheat a non-stick pan over medium heat. Lightly grease with butter or oil.

3. Pour 1/4 cup of batter into the pan and tilt to spread evenly. Cook for 1–2 minutes, flip, then cook another 30–60 seconds.

4. Stack crêpes on a plate and cover to keep warm. Repeat with remaining batter.

5. Serve warm with toppings like whipped cream, berries, powdered sugar, or your favorite filling.

6. Customize by filling with cream cheese, chocolate spread, or spiced fruit for variety.

Notes

Resting the batter improves texture and ensures thinner, smoother crêpes.

Adjust the thickness by slightly increasing or decreasing the eggnog.

Always keep the pan lightly greased to avoid sticking.
