8 large flour tortillas

10 large eggs

1/4 cup milk or cream

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter or oil

12 ounces breakfast sausage

1 1/2 cups shredded cheddar cheese

Optional: 1 cup sautéed bell peppers, onions, or spinach


Instructions

1. In a skillet over medium heat, cook and crumble the sausage until browned and fully cooked. Drain and set aside to cool.

2. In a bowl, whisk eggs with milk, salt, and pepper.

3. Heat butter or oil in a nonstick skillet over medium-low heat. Add eggs and gently scramble until just set. Remove from heat.

4. Warm each tortilla for 10–15 seconds to prevent cracking.

5. Lay out a tortilla, add a scoop of scrambled eggs, sausage, and a sprinkle of cheese (and optional veggies).

6. Fold in the sides, then roll tightly from the bottom up.

7. To enjoy now, toast in a skillet until golden. To freeze, wrap tightly in plastic wrap and foil, then place in a freezer-safe bag.

8. Reheat in the microwave (2–3 minutes from frozen), and crisp in a skillet or toaster oven if desired.
