  • 1 1/2 lbs ground beef (80/20)
  • 1 small onion, finely diced
  • 1 green bell pepper, finely diced
  • 1 cup shredded provolone cheese
  • 1/2 cup breadcrumbs (plain or Italian)
  • 2 large eggs
  • 2 tbsp milk
  • 1 tbsp Worcestershire sauce
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 slices provolone cheese (for topping)
  • Optional: fresh chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan.
  2. In a skillet over medium heat, sauté diced onions and bell peppers in a bit of oil until soft and slightly caramelized. Let cool.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, salt, and pepper.
  4. Add in the cooked veggies and shredded provolone cheese. Mix just until combined.
  5. Press the meat mixture into the loaf pan, shaping evenly.
  6. Bake uncovered for 35–40 minutes, until internal temp reaches 160°F (71°C).
  7. Add provolone slices on top and return to oven for 5–8 more minutes until melted and bubbly.
  8. Let rest 10 minutes before slicing. Garnish with parsley if desired.
