  • 1 sheet frozen puff pastry, thawed
  • 1 cup sliced peaches (fresh, canned, or frozen & thawed)
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, gently toss peach slices with sugar, vanilla, cornstarch, and cinnamon (if using).
  3. On a floured surface, unfold puff pastry and cut into 6 equal rectangles.
  4. Spoon peach mixture onto one half of each rectangle, leaving a small border.
