- 1 (12-16 oz) package cheese tortellini
- 12 oz kielbasa sausage, sliced into ½-inch rounds
- 2 cups cherry or grape tomatoes, halved
- 2–3 tablespoons olive oil
- 3 cloves garlic, minced
- ½ teaspoon dried oregano
- Salt & freshly ground black pepper, to taste
- ¼ cup grated Parmesan cheese
- Fresh basil leaves (optional)

- Spinach or kale
- Red pepper flakes
Instructions
- Preheat oven to 400°F (200°C).
- Bring a pot of salted water to a boil. Par-cook the tortellini for 2-3 minutes until they float. Drain and set aside.
- Lightly grease a large sheet pan or line with parchment paper.
- In a mixing bowl, combine tortellini, sliced kielbasa, tomatoes, garlic, olive oil, oregano, salt, and pepper. Toss well.
- Spread the mixture evenly on the sheet pan.
- Roast for 15-18 minutes, tossing halfway through, until the kielbasa is caramelized and tomatoes are blistered.
- Remove from oven, sprinkle with Parmesan and fresh basil.
- Serve warm and enjoy!
