1 cup full-fat cottage cheese

1 large egg

1/2 teaspoon garlic powder

1 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

3/4 cup pizza sauce or marinara

1 1/2 cups shredded mozzarella cheese

1/4 cup grated parmesan cheese

20 slices pepperoni

1 teaspoon olive oil or non-stick spray


Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 baking dish with olive oil or cooking spray.

2. In a bowl, mix the cottage cheese, egg, garlic powder, Italian seasoning, salt, and black pepper until well combined. Blend for a smoother texture if preferred.

3. Spread half of the cottage cheese mixture into the bottom of the dish.

4. Spoon half the pizza sauce over the cottage cheese.

7. Repeat layers with remaining cottage cheese, sauce, cheeses, and pepperoni.

8. Bake uncovered for 25–30 minutes until cheese is bubbly and golden.

9. Let rest for 5–10 minutes before serving to allow it to set properly.

10. Garnish with parsley or red pepper flakes if desired.
