Ingredients

Scale

2 1/2 cups powdered sugar

2 tablespoons unsalted butter (softened)

2 tablespoons heavy cream

1 1/2 teaspoons peppermint extract

1/2 teaspoon vanilla extract

8 oz semi-sweet or dark chocolate chips

1 tablespoon coconut oil

Crushed peppermint candies

Parchment paper

Instructions

1. In a bowl, mix powdered sugar, butter, cream, peppermint extract, and vanilla until smooth and dough-like.

2. Roll into 1-inch balls and flatten into discs on parchment-lined tray. Chill 30 minutes.

3. Melt chocolate with coconut oil in microwave or double boiler until smooth.

4. Dip each chilled patty into chocolate, let excess drip, place back on tray.

5. Sprinkle crushed peppermint on top while chocolate is wet. Let set and enjoy!

Notes

Use coconut cream and vegan butter to make it dairy-free.

Make sure patties are well-chilled before dipping to keep shape.

Store in layers with parchment to avoid sticking.
