Ingredients
2 1/2 cups powdered sugar
2 tablespoons unsalted butter (softened)
2 tablespoons heavy cream
1 1/2 teaspoons peppermint extract
1/2 teaspoon vanilla extract
8 oz semi-sweet or dark chocolate chips
1 tablespoon coconut oil
Crushed peppermint candies
Parchment paper
Instructions
1. In a bowl, mix powdered sugar, butter, cream, peppermint extract, and vanilla until smooth and dough-like.
2. Roll into 1-inch balls and flatten into discs on parchment-lined tray. Chill 30 minutes.
