  • 4 medium potatoes (Russet or Yukon Gold), thinly sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 2 cups shredded sharp cheddar cheese
  • Sour cream, for serving (optional)
  • Chopped green onions, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Prepare ingredients: Peel and thinly slice potatoes (about 1/8 inch thick). Dice onion and mince garlic. Shred cheese if needed.

  3. Brown the beef: In a large skillet, cook ground beef over medium heat. Add diced onion and garlic. Season with salt, pepper, and paprika. Cook until beef is browned and onions are soft. Drain excess fat.

  4. Layer the casserole: Lightly grease a 9×13-inch baking dish. Layer half of the sliced potatoes on the bottom. Spread half the beef mixture over them. Repeat with remaining potatoes and beef. Top with the final layer of potatoes.

  5. Add cheese and bake: Sprinkle shredded cheddar cheese on top. Cover with foil and bake for 50-60 minutes. Uncover for the last 10-15 minutes to brown the cheese.

  6. Rest and serve: Let the casserole rest for 10 minutes before slicing. Garnish with sour cream and green onions if desired.
