1 ¾ cups all-purpose flour

2 ¼ teaspoons instant yeast

¾ cup warm water

2 tablespoons olive oil (plus more for topping)

¾ teaspoon salt

1 tablespoon chopped fresh rosemary (plus extra for topping)

2 cloves garlic, minced or roasted

1 teaspoon sugar

¼ cup shredded cheese (optional)


Instructions

1. In a large bowl, combine flour, yeast, sugar, and salt. Stir well.

2. Add warm water and olive oil. Mix until a shaggy dough forms.

3. Fold in garlic, rosemary, and shredded cheese if using. Mix just until combined.

4. Cover the bowl and let the dough rise in a warm place for 30–40 minutes.

5. Grease a 12-cup muffin tin with olive oil. Spoon the dough into cups about halfway full.

6. Let the filled tin rise for another 15–20 minutes. Preheat the oven to 400°F (200°C).

7. Drizzle tops with more olive oil, rosemary, garlic, and a pinch of sea salt.

8. Bake for 18–22 minutes until golden brown and a toothpick comes out clean.

9. Cool for 5 minutes in the tin, then transfer to a wire rack. Serve warm.


Notes

Make sure your water is warm, not hot — around 105–110°F is ideal for yeast activation.

Fresh rosemary and roasted garlic add more depth, but substitutions still work well.

Don’t skip greasing the muffin tin generously — focaccia tends to stick without it.
