Ingredients
1.5 pounds chicken breasts or tenderloins
4 cloves garlic minced
0.75 cup grated Parmesan cheese
1 tablespoon olive oil
0.75 cup heavy cream
0.5 cup sun-dried tomatoes chopped
1 tablespoon Cajun seasoning
1 bunch broccolini trimmed
Salt to taste
Black pepper to taste
2 tablespoons chopped parsley optional
Instructions
1. Cut the chicken into bite-sized pieces and pat dry. Season with salt, pepper, garlic, and coat with grated Parmesan.
2. Heat olive oil in a skillet over medium-high heat. Sear the chicken in batches until golden and cooked through, about 3–4 minutes per side. Remove and set aside.
3. Lower heat to medium, add a bit of oil from the sun-dried tomato jar. Sauté the chopped sun-dried tomatoes and Cajun seasoning for 30 seconds.
4. Pour in heavy cream and simmer for 3–4 minutes until thickened slightly.
5. Return chicken to the skillet and coat with sauce. Let it simmer for 2 more minutes.
6. In a separate pan, heat olive oil over high heat. Add broccolini and sear until charred and tender, about 5–7 minutes. Season with salt.
7. Plate the chicken and sauce with broccolini on the side. Garnish with chopped parsley if desired.
Notes
Use fresh Parmesan and press it into the chicken to get a great crust.
Don’t rush the sauce—let it simmer gently to avoid separation.
Charring the broccolini brings contrast and deep flavor to the dish.
