Ingredients
4 cups chopped apples
1 cup brown sugar
1 cup granulated sugar
2 tablespoons lemon juice

2 tablespoons butter
1 pouch (3 oz) liquid pectin
1 teaspoon vanilla extract
Instructions
1. Peel, core, and finely chop apples to make 4 cups.
2. In a large pot, combine apples, brown sugar, white sugar, lemon juice, cinnamon, nutmeg, and butter.
3. Cook over medium heat, stirring until the sugars dissolve and butter melts.
4. Increase heat to high and bring mixture to a full rolling boil, stirring constantly.
5. Stir in the liquid pectin and boil hard for exactly 1 minute, stirring constantly.
6. Remove from heat and stir in vanilla extract.
7. Ladle the hot jam into sterilized jars, leaving 1/4-inch headspace.
8. Wipe jar rims, add lids, and screw bands until fingertip tight.
9. (Optional) Process jars in a boiling water bath for 10 minutes.
10. Let jars cool undisturbed for 24 hours before storing.
