Ingredients

12 Medjool dates

6 tablespoons peanut butter

1⁄3 cup crushed peanuts

1 cup dark chocolate chips

1 teaspoon coconut oil (optional)

Flaky sea salt, to taste


Instructions

1. Slice each Medjool date lengthwise on one side and remove the pit, keeping them intact.

2. Fill the cavity of each date with about 1⁄2 tablespoon of peanut butter.

3. Sprinkle crushed peanuts into the peanut butter of each date and press lightly.

4. Place filled dates on a parchment-lined tray and freeze for 10–15 minutes.

5. Melt dark chocolate chips with coconut oil (if using) until smooth.

6. Dip each chilled date into the chocolate, coating completely. Let excess drip off.

7. Return dipped dates to the tray and sprinkle flaky sea salt on top before the chocolate sets.

8. Chill again for 10–15 minutes until chocolate is firm. Serve and enjoy!


Notes

For firmer bites, keep them stored in the freezer and let thaw slightly before eating.

If your dates are dry, soak them in warm water for 10 minutes and pat dry before stuffing.

Use a fork for dipping to make coating and transferring easier.
