2 boneless skinless chicken breasts

8 ounces rotini pasta

3 cloves garlic minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon Italian seasoning

1 tablespoon chopped parsley

1 pinch red pepper flakes (optional)


Instructions

1. Slice chicken breasts into cutlets or bite-sized pieces. Season with salt, pepper, Italian seasoning, and red pepper flakes.

2. Heat butter and olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden and cooked through. Remove and set aside.

3. Boil rotini pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

4. In the same skillet, lower heat. Add remaining butter and sauté minced garlic for 30 seconds.

5. Pour in heavy cream, stir, and let simmer for 2–3 minutes. Stir in Parmesan until sauce thickens.

6. Return chicken to the skillet and toss to coat in sauce. Add pasta and mix gently. Use pasta water to loosen sauce if needed.

7. Garnish with chopped parsley and extra Parmesan. Serve hot and enjoy!


Notes

Use freshly grated Parmesan for a smooth, creamy sauce that melts perfectly.
