12 oz egg noodles

1 tablespoon olive oil or butter

1 small yellow onion, diced

2 garlic cloves, minced

1 cup frozen peas

1 cup frozen corn

1 cup diced carrots

1/3 cup all-purpose flour

3 cups chicken broth

1 cup whole milk or half-and-half

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon dried parsley

1/2 teaspoon poultry seasoning (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook egg noodles until al dente. Drain and set aside.

2. In the same pot, heat olive oil or butter over medium heat. Add diced onion and sauté until translucent, about 4 minutes. Add garlic and cook for 30 seconds.

3. Add peas, corn, and carrots. Cook for 3–4 minutes until tender.
