  • 4 cups Yukon Gold or Russet potatoes, peeled and sliced into 1/8-inch rounds
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh thyme or rosemary sprigs (optional)
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. Peel and slice potatoes into 1/8-inch rounds.
  3. In a saucepan, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
  4. Whisk in flour and cook for 1–2 minutes. Gradually add heavy cream and milk, whisking continuously until thickened.
  5. Reduce heat to low and stir in shredded cheese until melted. Season with salt, pepper, and nutmeg if using.
  6. Layer half of the potatoes in the baking dish and pour half of the cheese sauce over them. Repeat with remaining potatoes and sauce.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 25–30 minutes, until potatoes are tender and top is golden.
  8. Let rest for 10 minutes before serving. Garnish with fresh herbs if desired.
