- 4 cups Yukon Gold or Russet potatoes, peeled and sliced into 1/8-inch rounds
- 2 cups sharp cheddar cheese, shredded
- 1 cup heavy cream
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh thyme or rosemary sprigs (optional)
- Pinch of nutmeg (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
- Peel and slice potatoes into 1/8-inch rounds.
- In a saucepan, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Whisk in flour and cook for 1–2 minutes. Gradually add heavy cream and milk, whisking continuously until thickened.
- Reduce heat to low and stir in shredded cheese until melted. Season with salt, pepper, and nutmeg if using.
- Layer half of the potatoes in the baking dish and pour half of the cheese sauce over them. Repeat with remaining potatoes and sauce.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 25–30 minutes, until potatoes are tender and top is golden.
- Let rest for 10 minutes before serving. Garnish with fresh herbs if desired.
