1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

0.5 tsp paprika

Salt and pepper, to taste

8 medium flour tortillas

1 can (10 oz) red enchilada sauce

2 cups shredded cheddar cheese

0.5 cup black beans or corn (optional)

Sour cream, for serving (optional)

Fresh cilantro, chopped (optional)

Sliced jalapeños or hot sauce (optional)


Instructions

1. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft, about 6–8 minutes. Drain excess fat.

2. Add minced garlic, cumin, chili powder, paprika, salt, and pepper. Stir well and cook for another 1–2 minutes to combine flavors.

3. Preheat the oven to 375°F (190°C). Lightly spread a few tablespoons of enchilada sauce in the bottom of a 9x13-inch baking dish.

4. Warm the tortillas in the microwave for 20–30 seconds to soften them.

5. Fill each tortilla with about ⅓ cup of the beef mixture and a sprinkle of cheese (optional). Roll and place seam-side down in the baking dish.

6. Pour the remaining enchilada sauce evenly over the top of the rolled tortillas. Spread it out with a spoon.

7. Top with shredded cheese. Cover the dish with foil.

8. Bake for 15–20 minutes covered, then uncover and bake another 8–10 minutes until the cheese is bubbly and melted.

9. Let rest for 5 minutes. Garnish with sour cream, cilantro, or jalapeños. Serve warm and enjoy.
