- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- 1 cup sharp cheddar cheese, freshly grated
- 1 cup sourdough discard (unfed, room temperature)
- ¼ cup cold buttermilk (or milk + 1 tsp lemon juice/vinegar)
- Optional: melted butter or cream for brushing tops
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Gently fold in the grated cheddar cheese.
- Add sourdough discard and buttermilk; stir until dough just comes together (it will be slightly sticky).
- Turn dough onto a lightly floured surface. Pat into a rectangle, fold in thirds, repeat 2–3 times.
- Pat dough to ¾–1 inch thick. Cut out biscuits without twisting.
- Arrange biscuits on baking sheet. Brush tops with melted butter or cream, if desired.
- Bake for 14–18 minutes, or until biscuits are puffed and golden brown.
- Cool slightly and enjoy warm!
