Ingredients
1 cup uncooked long-grain white rice
1.5 pounds boneless, skinless chicken breasts or thighs
1 can (10.5 oz) cream of mushroom soup
2 cups low-sodium chicken broth
1/2 cup sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup mixed vegetables (optional)
2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or oil.
2. In a large mixing bowl, combine uncooked rice, cream of mushroom soup, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper. Stir until fully combined.
3. Pour the mixture into the prepared baking dish and spread evenly.
4. Nestle the chicken breasts or thighs into the rice mixture, making sure they are partially covered by liquid.
