Ingredients
2 pounds chicken tenders or boneless chicken breasts, sliced into strips
1 1/2 cups dill pickle juice
1 cup panko breadcrumbs
1 cup crushed kettle-cooked potato chips
1 cup freshly grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2 large eggs
1/4 cup milk
2 tablespoons melted butter or olive oil
1/2 cup sour cream or plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons finely chopped dill pickles
1 tablespoon fresh dill, chopped
1 tablespoon pickle juice
Salt and pepper to taste

Instructions
1. Place chicken strips in a bowl or zip-top bag and pour over the pickle juice. Cover and marinate for at least 1 hour or up to overnight.
2. In a shallow dish, combine panko, crushed chips, Parmesan, garlic powder, black pepper, paprika, and cayenne. In another bowl, whisk eggs and milk.
3. Remove chicken from the marinade and pat dry. Dip each piece in the egg mixture, then coat in the breadcrumb mixture. Set aside.
4. Preheat oven to 425°F (220°C). Place chicken on a lined baking sheet or wire rack. Drizzle with melted butter or olive oil.
5. Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked to 165°F internal temperature.
6. While chicken bakes, mix all dill sauce ingredients in a small bowl. Chill until ready to serve.
7. Let chicken rest for 5 minutes after baking. Top with dill sauce, sliced pickles, and fresh dill. Serve immediately.
