Ingredients
1 lb boneless skinless chicken thighs
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 garlic cloves minced
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes
2 cups cooked jasmine rice
1/2 teaspoon salt
1 1/2 cups broccoli florets
1/4 cup mayonnaise
1 tablespoon sriracha
1/2 teaspoon sesame oil
2 tablespoons chopped green onions
2 teaspoons toasted sesame seeds
Instructions
1. Place chicken thighs in a bowl or zip-top bag. In a separate bowl, mix soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Pour over chicken and marinate for at least 15–30 minutes.
2. Rinse rice under cold water until clear. Cook according to package directions. Once done, fluff with a fork and set aside.
3. In a bowl, stir together mayonnaise, sriracha, and sesame oil until creamy. Set aside.
4. Heat a non-stick skillet over medium heat. Cook marinated chicken 5–7 minutes per side or until fully cooked and glazed. Rest for 5 minutes, then slice.
5. Steam broccoli until bright green and tender-crisp, about 4–5 minutes. Season lightly with salt if desired.
6. Assemble bowls with a bed of rice, topped with sliced chicken, broccoli, spicy mayo drizzle, green onions, and sesame seeds.
