Description
A delicious homemade Italian Herb and Cheese Bread that’s soft, flavorful, and filled with gooey melted cheese and fragrant herbs. Perfect for serving with soups, pastas, or as a stand-alone treat!
Ingredients
- 3 ½ cups bread flour (plus extra for dusting)
- 2 ¼ tsp active dry yeast
- 1 ¼ cups warm water (105°F–110°F)
- 1 tbsp sugar
- 1 ½ tsp salt
- 2 tbsp olive oil (plus more for brushing)
- 1 tbsp Italian herb blend (dried oregano, basil, thyme, parsley)
- 3 cloves garlic, minced
- 1 ½ cups shredded mozzarella cheese
- ½ cup shredded sharp cheddar cheese
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions

In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5–7 minutes until foamy.

Add olive oil, salt, and half of the flour. Stir to combine. Gradually add remaining flour until a soft dough forms.

Turn dough onto a floured surface. Knead for 8–10 minutes until smooth and elastic.

Place dough in a greased bowl. Cover and let rise in a warm place for 1–1 ½ hours or until doubled in size.

Punch down the dough and shape into a rectangle. Sprinkle garlic and both cheeses evenly over the dough.

Roll up the dough jelly-roll style, tucking in the ends. Place seam-side down in a greased loaf pan.

Cover and let rise for 30–40 minutes until puffy. Preheat oven to 375°F (190°C).

Brush the loaf with olive oil and sprinkle with Italian herbs and extra cheese if desired.

Bake for 25–30 minutes until golden brown and sounds hollow when tapped.

Cool slightly, garnish with fresh parsley, and enjoy!
