Ingredients

3 large eggs

1 cup ricotta cheese or cottage cheese

1/2 cup milk

4 cups frozen shredded hash browns thawed

1 lb ground beef 80/20

1/2 lb Italian sausage casings removed

1 small onion finely diced

2 garlic cloves minced

24 oz marinara or pizza sauce

1/2 tsp dried oregano

1/2 tsp dried basil

1/4 tsp crushed red pepper flakes optional

1 tsp salt

1/2 tsp black pepper

3 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups shredded cheddar cheese

25 slices pepperoni

2 tbsp chopped parsley or basil optional


Instructions

1. Preheat oven to 375°F and grease a 9×13 inch baking dish.

2. In a large bowl mix thawed hash browns eggs milk salt and pepper then press mixture into the baking dish to form a crust.

3. Bake the hash brown crust for 20 minutes until lightly golden and set.

4. While crust bakes cook ground beef and Italian sausage in a large skillet over medium heat until browned.

5. Add diced onion and cook until soft then stir in minced garlic and cook for 1 minute.

6. Drain excess fat and stir in marinara sauce oregano basil crushed red pepper salt and pepper.

7. Simmer the sauce mixture for about 10 minutes to combine flavors.

8. In another bowl mix ricotta cheese half the Parmesan and 1 cup mozzarella.

9. Spread the cheese mixture over the baked hash brown crust evenly.

10. Add the meat sauce layer over the cheese mixture.

11. Top with remaining mozzarella cheddar and Parmesan cheeses then arrange pepperoni slices on top.

12. Bake uncovered for 25 to 30 minutes until cheese is bubbly and slightly golden.

13. Allow casserole to rest for 10 minutes before slicing then garnish with parsley or basil and serve.


Notes

Drain cooked meat well so excess grease does not make the casserole oily.

Allow the casserole to rest after baking so the layers set properly before slicing.

Freshly shredded cheese melts smoother and gives the dish a richer texture.
