Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped pecans

For the Frosting:

 

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • Additional chopped pecans for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. In a bowl, whisk eggs, sugars, and oil until smooth. Stir in grated carrots.
  3. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet ingredients, stirring until combined. Fold in pecans.
  5. Pour batter into the pan, spread evenly, and bake for 25-30 minutes.
  6. Cool completely before frosting.
  7. For the frosting, beat cream cheese and butter until creamy. Add powdered sugar and vanilla, beat until fluffy.
  8. Spread frosting over cooled bars, garnish with pecans, and slice to serve
