1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1 teaspoon vanilla extract
1 1/4 cups roasted salted peanuts (Spanish peanuts preferred)
1/2 cup sweetened condensed milk
1/4 cup light corn syrup
1 cup powdered sugar
Instructions
1. Cream the butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
2. Beat in the egg and vanilla extract until fully combined.
3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the butter mixture.
4. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
5. Scoop dough into balls, flatten slightly, and place 2 inches apart on the sheets.
6. Bake for 10–12 minutes until edges are golden. Let cool on wire racks.
7. In a saucepan, heat sweetened condensed milk and corn syrup, stirring until slightly thickened (3–5 minutes).
8. Remove from heat and whisk in powdered sugar until smooth.
9. Fold peanuts into the warm glaze.
10. Spoon glaze over cooled cookies and spread to edges. Let set for 30 minutes.
Notes
Always cool cookies fully before glazing to prevent sogginess.
If the glaze thickens too much, warm it gently and stir in a splash of milk.
