2 boneless skinless chicken breasts

2 cans great northern beans drained and rinsed

1 1/2 cups corn kernels

1 can diced green chilies

1 small onion diced

3 cloves garlic minced

3 cups chicken broth

4 oz cream cheese cubed

1/2 cup sour cream

1 cup shredded cheddar cheese

1 tsp cumin

1 tsp chili powder

1/2 tsp salt

1/2 tsp black pepper

2 tbsp fresh cilantro chopped


Instructions

1. Place the chicken breasts at the bottom of the crockpot.

2. Add beans, corn, green chilies, onion, and garlic on top.

3. Sprinkle cumin, chili powder, salt, and black pepper evenly.

4. Pour chicken broth over all ingredients until mostly covered.

5. Cover and cook on low for 6–8 hours or high for 3–4 hours.

6. Remove cooked chicken, shred with forks, and return to pot.

7. Add cream cheese and stir until fully melted and combined.

8. Mix in sour cream and shredded cheese until smooth.

9. Taste and adjust seasoning if needed.
