Ingredients
1 ½ pounds ground beef
1 cup breadcrumbs
½ cup milk
2 large eggs
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
¼ cup ketchup (for meat mixture)
½ cup ketchup (for glaze)
2 tablespoons brown sugar
2 tablespoons fresh parsley, chopped
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. In a small bowl, mix together ½ cup ketchup and 2 tablespoons brown sugar to make the glaze. Set aside.
2. In a large bowl, combine ground beef, breadcrumbs, milk, eggs, chopped onion, garlic, Worcestershire sauce, ¼ cup ketchup, parsley, salt, and pepper. Mix until just combined.
3. Shape the mixture into a loaf that fits inside your crockpot. Optional: line the crockpot with foil or parchment for easy cleanup.
4. Place the meatloaf into the crockpot. Cover and cook on Low for 6–7 hours or on High for 3–4 hours.
5. About 30 minutes before the end of cooking, spread the glaze over the top of the meatloaf. Cover and continue cooking.
6. When done, the internal temperature should be 160°F. Let the meatloaf rest for 10 minutes before slicing and serving.
