  • 2 cups elbow macaroni, uncooked
  • 2 ½ cups whole milk
  • 1 (12 oz) can evaporated milk
  • 2 ½ cups freshly shredded sharp cheddar cheese
  • 1 cup freshly shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup unsalted butter, melted
  • ½ tsp ground mustard (optional)
  • Salt and pepper, to taste
  • Pinch of paprika or cayenne (optional)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Boil elbow macaroni for 4–5 minutes. Drain and set aside.
  2. Lightly grease the crockpot insert with butter or non-stick spray.
  3. In a mixing bowl, whisk together whole milk, evaporated milk, melted butter, and ground mustard (if using).
  4. Add pasta to the crockpot.
  5. Pour milk mixture over the pasta.
  6. Stir in half the cheddar and mozzarella, along with all the Parmesan.
  7. Sprinkle the remaining cheddar and mozzarella on top.
  8. Cover and cook on LOW for 1½ to 2 hours, stirring once halfway if possible.
  9. Garnish with chopped parsley and paprika before serving.
