  • 4 cups ham, diced (fully cooked)
  • 6 cups potatoes, peeled and diced (Russet or Yukon Gold)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced (optional)
  • 1 cup celery, diced (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 cup shredded cheddar cheese (optional, for a cheesy twist)

Instructions

  1. Prepare all ingredients by dicing the ham, peeling and chopping potatoes, and dicing onions, garlic, carrots, and celery if using.
  2. Add potatoes, ham, onions, garlic, carrots, celery, and chicken broth to the crockpot. Season with salt and pepper to taste.
  3. Cover and cook on Low for 6-8 hours or High for 4-5 hours, until potatoes are tender.
  4. About 30 minutes before serving, stir in heavy cream. For a thicker soup, mash some of the potatoes or add a cornstarch slurry.
  5. Taste and adjust seasoning as needed. Ladle into bowls and garnish with fresh parsley or cheddar cheese, if desired.
  6. Serve hot with crusty bread or crackers. Enjoy!
