Ingredients
2 boneless, skinless chicken breasts
1 can (15 oz) diced tomatoes with juice
1 can (15 oz) tomato sauce
4 cups chicken broth
1 medium yellow onion, diced
3 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups rotini pasta (uncooked)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Add diced tomatoes, tomato sauce, chicken broth, onion, garlic, basil, oregano, salt, and pepper to your crockpot. Stir to combine.
2. Place the chicken breasts into the crockpot, nestling them into the liquid.
3. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender.
4. Remove the chicken from the crockpot, shred it using two forks, then return it to the soup.
5. Stir in the rotini pasta and cook on high for 20–30 minutes, or until the pasta is al dente. Stir occasionally.
6. Once pasta is cooked, add mozzarella and Parmesan cheeses. Stir until melted and well combined.
7. Taste and adjust seasonings if needed.
8. Ladle into bowls, top with fresh parsley and extra cheese if desired, and serve warm.
Notes
Only add the pasta during the last 20–30 minutes to avoid overcooking.
Stir cheese in at the end for the best melty, creamy texture.
To freeze, store without pasta and add fresh-cooked pasta when reheating.
