Description

This Crock Pot Cheesy Chicken Spaghetti is a creamy, dreamy comfort dish that practically cooks itself. Perfect for busy weeknights or weekend meal preps, it combines tender shredded chicken, Velveeta cheese, and a flavorful tomato-chicken base all tossed with perfectly cooked spaghetti. Whether you’re looking for quick dinner ideas, a hearty family meal, or cozy comfort food, this easy recipe will quickly become a go-to favorite. It’s one of those dinner ideas that hits all the right notes—cheesy, saucy, and satisfying.

Ingredients

Scale

1.5 pounds boneless skinless chicken breasts

2 cans (10.5 oz each) cream of chicken soup

1 can (10 oz) diced tomatoes with green chilies

16 ounces Velveeta cheese, cubed

1 cup chicken broth

12 ounces spaghetti noodles

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons chopped parsley (optional, for garnish)

Instructions

1. Place chicken breasts in the crock pot.

2. Add cream of chicken soup, diced tomatoes, garlic powder, onion powder, salt, and pepper.

3. Top with cubed Velveeta cheese and pour in chicken broth around the sides.

4. Cover and cook on LOW for 5 to 6 hours.

5. Once cooked, shred the chicken using two forks directly in the crock pot.

6. Stir the shredded chicken into the cheesy mixture until fully combined.

7. Cook spaghetti noodles separately until al dente, then drain.

8. Stir the cooked pasta into the crock pot mixture.

9. Let everything sit on WARM for 10 to 15 minutes to absorb flavors.

10. Garnish with chopped parsley before serving.

Notes

Use freshly shredded chicken if you’re in a rush—rotisserie works great too.

Always cook your pasta separately to avoid soggy noodles.

For extra heat, add red pepper flakes or use spicy diced tomatoes.
