Ingredients

1 lb ground beef

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper to taste

1/4 cup diced onions

1/4 cup diced pickles

1 tbsp yellow mustard

1/4 cup ketchup

1 1/2 cups shredded cheddar cheese

4 large flour tortillas

Butter or oil for greasing the skillet

Optional toppings: shredded lettuce, sliced tomatoes, hot sauce, jalapeños


Instructions

1. In a large skillet over medium-high heat, cook the ground beef, breaking it up as it browns. Add garlic powder, onion powder, smoked paprika, salt, and pepper. Stir in diced onions and pickles if using. Cook for 6–8 minutes until browned. Drain excess fat and let cool slightly.

2. Lay out the tortillas. On half of each, spread mustard and ketchup. Add beef mixture and top with shredded cheese. Fold over to form a half-moon.

3. Heat a skillet over medium heat. Lightly grease with butter or oil. Cook quesadillas for 2–3 minutes per side, pressing with a spatula until golden brown and cheese is melted.

4. Transfer to a plate, let rest 1 minute, then slice into wedges. Serve warm with optional toppings or dipping sauces.


Notes

Use freshly shredded cheese for a smoother melt and stronger flavor.

Don’t overstuff your quesadillas to avoid leakage and promote even cooking.
