  • 1 lb Ribeye steak (or skirt or flank steak, thinly sliced)
  • 4 large flour tortillas
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cups provolone or American cheese, shredded
  • 2 tbsp butter or oil (for grilling)

Instructions

  1. Slice the Beef: Slice the beef thinly against the grain for tenderness. Freeze briefly if needed to make slicing easier.
  2. Sauté the Veggies: Heat a pan over medium heat with a bit of oil. Add onions and bell peppers and cook until softened, about 5-7 minutes. Remove from the pan and set aside.
  3. Cook the Beef: Add the sliced beef to the same pan and cook for 2-3 minutes, browning it quickly over medium-high heat. Season with salt, pepper, and any additional spices.
  4. Melt the Cheese: Lower the heat and sprinkle the cheese over the cooked beef. Let it melt into the beef, creating a creamy, cheesy filling.
  5. Assemble the Wraps: Lay tortillas flat and spoon the beef and melted cheese mixture into the center. Add sautéed onions and peppers, then roll up the wraps tightly.
