Ingredients
Scale
- 1 lb Ribeye steak (or skirt or flank steak, thinly sliced)
- 4 large flour tortillas
- 1 medium onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 cups provolone or American cheese, shredded
- 2 tbsp butter or oil (for grilling)
Instructions
- Slice the Beef: Slice the beef thinly against the grain for tenderness. Freeze briefly if needed to make slicing easier.
- Sauté the Veggies: Heat a pan over medium heat with a bit of oil. Add onions and bell peppers and cook until softened, about 5-7 minutes. Remove from the pan and set aside.
- Cook the Beef: Add the sliced beef to the same pan and cook for 2-3 minutes, browning it quickly over medium-high heat. Season with salt, pepper, and any additional spices.
- Melt the Cheese: Lower the heat and sprinkle the cheese over the cooked beef. Let it melt into the beef, creating a creamy, cheesy filling.
- Assemble the Wraps: Lay tortillas flat and spoon the beef and melted cheese mixture into the center. Add sautéed onions and peppers, then roll up the wraps tightly.
- Grill the Wraps: Heat a bit of butter or oil in a pan over medium heat. Place the wraps seam-side down and grill for 2-3 minutes on each side until golden brown and crispy.
