Ingredients
2 boneless, skinless chicken breasts
1 cup freshly grated Parmesan cheese
1 cup panko breadcrumbs
1/2 cup Italian-style breadcrumbs
1/2 cup all-purpose flour
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons butter
3/4 cup heavy cream (optional, for sauce)
2 cloves garlic, minced (for sauce)
1 tablespoon chopped fresh parsley or thyme (for sauce)
1/2 teaspoon red pepper flakes (for sauce)
Instructions
1. Slice chicken breasts horizontally to make thin cutlets and pound to even thickness if needed.
2. Set up three bowls: flour in one, beaten eggs in another, and a mix of Parmesan, both breadcrumbs, and spices in the third.
3. Coat chicken in flour, then dip in egg, and press into breadcrumb-Parmesan mixture until well coated.
4. Heat olive oil and butter in a skillet over medium heat. Fry chicken 3–4 minutes per side until golden and cooked through.
5. For sauce (optional): In the same skillet, sauté garlic in butter, add cream, herbs, and red pepper flakes. Simmer until thickened.
6. Pour sauce over chicken or serve on the side. Garnish with chopped parsley and extra Parmesan.
Notes
Chill breaded chicken for 15 minutes before frying for better crust adherence.
Don’t overcrowd the pan while frying, or the coating will become soggy.
