2 lbs Yukon Gold potatoes

1/3 cup grated Parmesan cheese
1 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat oven to 425°F (220°C).
2. Slice potatoes evenly into 1/8-inch rounds using a mandoline or sharp knife.
3. Heat olive oil in a large oven-safe skillet over medium heat.
4. Add minced garlic and sauté for 1–2 minutes until fragrant, then stir in thyme and rosemary.
5. Turn off heat and begin layering the potatoes in a circular pattern, overlapping slices.
6. Season each layer with salt, pepper, and Parmesan cheese.
7. Once all potatoes are layered, cover skillet with a lid and cook on medium heat for 10–12 minutes.
